Notes from the grove and the mill — harvest hours, paste temperature, and the six hours that decide a lot.
Picking after midday costs more than a few hours of daylight. It costs acidity, aroma and shelf life — and none of it can be recovered at the mill.
A malaxer below 27°C is not enough. If the paste is already warm when it arrives there, the label says cold-pressed but the oil is not.
Everything done right in the field can be undone in the back of a truck. Transport is not logistics here — it is part of the pressing.
